Wine production:
This cuvée was born out of a desire to rediscover a particular expression of Chardonnay in our valley. That is why, every year in January, we select two barrels that express what we expect from this grape variety in our region: beautiful ripe fruit that makes no concessions to freshness.
No dosage is added during disgorging in order to preserve the wine's authenticity.
Tasting:
Barrel fermentation brings out a rich, lively fruitiness. Its full maturity gives it a fairly broad and complex aromatic palette.

Food and wine pairing:
The velvety texture of Chardonnay from the Valley, its woody patina and fruity expression allow for multiple and even unusual pairings. Consider lobster with vine peach sabayon or a tangy dessert made with exotic fruits accompanied by a light cream.
