The surprise keel

Wine production:

We begin selecting Chardonnay barrels at the end of the harvest to find wines with good potential. Once the selection is complete, we begin bâtonnage (stirring the lees to keep them in suspension), the frequency and duration of which can vary depending on the year. The wine is not filtered and bottling takes place the following year.

Tasting:

This wine is light and elegant, delivering
a beautiful floral and fruity expression with plenty of body. All this is supported by a discreet woody structure
that enhances the generous aromatics. The finish is long and tangy.

Food and wine pairing:

Seafood or mussels are an obvious pairing for this wine. However, it could also be served with Rethel white pudding, Troyes andouillette sausage, followed by fresh goat's cheese or Langres cheese at the end of the meal.
