The Illuminated Valley

Wine production:

Éclats is a blend of the three main Champagne grape varieties, sourced from selected terroirs. Chardonnay is the dominant variety, followed by equal parts of the black grape varieties (Pinot Noir and Meunier). The musts come from the first two vintages and are mainly fermented in wood. The bottles are given time to develop their full aromas thanks to around 80 months of ageing in the cellar. The low dosage preserves the liveliness of this cuvée.

Tasting:

Éclats' aromas are rich in white fruits, citrus fruits, flowers and notes of almond and toasted bread. It is recommended to enjoy it between 9 and 12 degrees to appreciate its creamy effervescence and lively freshness. Full-bodied aromas complement the wine, with a lively, salty finish offering refined complexity.

Food and wine pairing:

Éclats pairs well with foie gras as a starter and white meats accompanied by citrus fruits as a main course. Soft cheeses such as Langres, Livarot or Munster are excellent choices to round off the meal.
