Fine's Solera

Wine production:

This spirit has been produced from all our plots since the early 1980s. The must comes from the last juices pressed in a press called a Rebêches, which are then vinified in the same way as clear wines. The following winter, this wine is distilled by a professional in Damery using a double copper still. The brandy obtained at around 70% ABV will gradually replenish the oldest barrels as they are bottled, losing degrees of alcohol year after year. This method, known as Solera, allows the same quality of alcohol to be maintained over time.

Tasting:

This flamboyant spirit, a veritable flame with a delicious warmth, should be served at around 18°C to reveal its full potential, in a glass that is as rounded as possible.

Food and wine pairing:

Cette Fine sera à son aise au moment du digestif , mais aussi en accompagnement de desserts aux pommes, poires, tartes tatins et pièces montées. Pour les amateurs, à découvrir avec un bon Havane ou pour déguster quelques chocolats noirs.
