Wine production:
Our Jadis cuvée is a blend of three grape varieties grown in our region. Chardonnay dominates with 60%, followed by Pinot Noir and Meunier (30% and 10% respectively). The grapes, which come from the premier cru vineyards of Cumières and Hautvillers, are harvested from old south-facing plots. Fermentation takes place in oak barrels and the bottles are sealed with a first cork as soon as they are bottled. This technique promotes very long ageing on lees for around ten years, leaving the wine lively and endowed with unrivalled complexity. The dosage of Jadis is subtle so as not to distort the wine.
Tasting:
The Cuvée Jadis faithfully reflects the style of Maison Caillez-Lemaire: beautiful freshness, marked sapidity and a certain fluidity on the palate. Its aromatic palette is very broad, ranging from brioche, acacia, white fruits, toasted notes and undergrowth. Its palate is powerful, structured, long and tense. Lovers of mature champagnes, perfect for relaxing moments by the fireside, can confidently keep this bottle in the cellar for three to four years.

Food and wine pairing:
To fully appreciate the expression of our Jadis, we recommend serving this champagne in a wine glass at a temperature of 10 to 12 degrees. At the table, it pairs perfectly with tender, creamy, autumnal dishes such as poached Bresse chicken with a cream and mushroom sauce, or truffle dumplings.
