Marc's Solera

Wine production:

This spirit has been produced from all our plots since the early 1980s. The juice comes from the solid parts of the grape, such as the pulp, skin and seeds, but not the stalks. Most often, they come from the red hillside. The following winter, this marc is distilled by a professional in Damery using a double copper still. The marc brandy obtained at around 70% ABV will gradually supplement the oldest barrels as they are bottled, losing degrees of alcohol year after year. This method, known as Solera, allows the same quality of alcohol to be maintained over time.

Tasting:

This traditional champagne spirit is presented here in its most authentic form. Frank, generous and captivating after just a few sips, it is testament to a rare expertise in champagne.

Food and wine pairing:

Marc is ideal as a digestif, but also pairs well with certain desserts: vanilla ice cream, some sorbets, tarte tatin, chocolate. And for the more adventurous, try it with Camembert.
